Let me get this straight, turning the pot MOMENTARILY changes the
brightness? If so, somewhere you have a bad connection to the tube.

Now, if I'm following you right, you are using a known good tube and
just swapping the power supply. This would tend to mean the supply
itself is causing the problem. How about bad solder connections on the
connector or the flyback. Also, does the brightness jump when you touch
the pot? If so, you could have an intermittent pot.
